Ingredients:

8 Toppits Big Muffin Cups

For the mixture:

1 egg

1 1/2 tsp. salt

250 g Greek yoghurt

2 tbsp. rapeseed oil

250 g flour

2 tsp. baking powder

1 small red pepper

200 g sheep's cheese

5 green olives (without stones)

1/2 tsp. oregano

Preparation:

 

  1. Mix egg with salt, yoghurt and oil. Stir in flour and baking powder.
  2. Finely dice the red pepper, sheep's cheese and olives and stir together with the flour mixture and oregano into the egg mixture.
  3. Fill the mixture into 8 cups and bake in a preheated oven at 180°C (Gas: mark 3, convection oven 160°C) for approx. 25-30 minutes until golden brown. Serve the muffins cold or warm.
